Eggless Banana-Oats Chococake





Bananas are the best alternative of eggs while making vegan cakes.Adding oats to banana cake is like icing on the cake.
      While talking about healthy cakes the very first question comes in our mind that when two whites; Refind flour and white sugar are the ingredients then how can we call it healthy.
         Let me tell you frankly I rarely use full part refind flour in my cakes.Instead I replace either half or three fourth part of refind flour by non-glutin  flours like ragi,millet ,oats or whole wheat flours.
Oats is my favourite in banana cake as it blends well.
There are two ways in which you can add oats in cake.Either first grind oats in grinder and then soak in milk or curd or first soak  then grind .It doesn't make much difference.Its totally up to your convenience.
Again you can either use curd or milk for soaking,whatever is available.
Some people don't like the taste of Oats so they may be apprehensive about trying this cake.Please let me assure you that when you will bake this cake which is superb in taste  and also  full of nutritional values of banana and fibre content of oats then  you will bake it again and again.
I have used Cocoa powder in this cake to suppress the blend taste of oats.If you have tried the chocolate banana cake ,(Click for a quick chocolate banana cake recipe~

Therefore adding cocoa powder makes this cake more interesting.
You can add walnuts  and almonds to enhance the taste further.You can spread nutella sause or Hershey's chocolate syrup on top before serving.Kids will love to indulge in and devour whole cake within minutes.

INGREDIENT
Mashed bananas- 2
Oats-100gms(one cup)
All purpose flour-50grams(half cup)
Cocoa powder-25 grams
Powdered sugar-3/4 cup
Olive oil-1/2 cup
Baking powder-1 teaspoon
Baking soda-1/2 teaspoon
Milk/curd- 1/2-3/4 cup(as per requirement)
Vanilla essence-7-8drops
Pinch of salt

METHOD

Step1

Soak oats in milk/curd for 20 minutes.Grind in mixture.
 Mix sugar,banana and oil thoroughly till it becomes light and fluffy.This gives your  final  cake a tender crumb.By beating these ingredients together,the sugar aerates the oil.This creates fine bubbles in your batter and give lightness and volume to oats cake.

Step2 

Add  oats paste in this.

Step3

Sift together all purpose flour+baking powder+baking soda+cocoa powder+pinch of salt two three times properly.Never try to skip this step cause mixing of dry ingredients is essential.

Step4

Now add flour into sugar oil mixture in steps by cut and fold method.Add milk to attain thick ribbon like consistency.Mix gently.Cut and fold method simply means that you have to mix by making figure of eight.

Step5

Pour the batter in greased tin and bake in preheated oven for 35-40 minutes at 150°C.Check by pricking a knife.If it comes out clean then cake is done.

Step6

Take out the dish from oven.cool completely and invert on another plate.

Step7

To decorate it you can use variety of things like whipped cream,chocolate syrup or Nutella chocolate sauce.
Your yummy cake is ready to serve!

Step by step method with pictures how to make Banana-Oats Chococake

1.Mix 3/4 cup powdered sugar ,2 mashed bananas🍌🍌 and 1/2 cup oil thoroughly.
2.Soak 1cup oats in 1/2  cup milk for 20 minutes and grind in mixture.

3.Sift together refind flour (half cup), Baking powder (1teaspoon), baking soda (1/2 teaspoon) ,cocoa powder and pinch of salt 2-3 times

 4.Now add this flour into sugar-oil mixture in steps and also add milk as per requirement by cut and fold method.

*Check the consistency (thick ribbon like).
5.Add chopped walnuts into the batter and mix gently.
 

 6. Pour this batter into greased baking dish.(thick ribbon consistency)
7.Bake in cooker on low flame for 50-60minutes.Check by inserting knife.If knife comes out clean then your cake is done.
8.Take out the dish.Leave for 15-20 minutes.Then take out the cake.
 

9.Decorate it with whipped cream and icing sugar or chocolate syrup/sauce as per your imaginations😋😋
 
10.Serve to your family and friends for various health benefits😊😊


Notes
*Soaking oats is very necessary otherwise your cake may not raise.
*You can use curd or milk anything for soaking oats.Soak for 20 miutes at least.
*While using milk for soaking oats you can add 1 tea spoon white vinegar in your cake batter just before pouring in cake tin for better results.
*In each and every recipe of mine I insist that please check the consistency of your batter properly.Too thick batter will produce a dense non fluffy cake while too thin batter will take more time to bake and eventually it may not rise well too.Thick ribbon like consistency is the key for perfect spongy cake.
